Location of the images
What changes need to be made to storae images on a separate disk? (so the backup of the vmdk can happen)

You should use the repository.binary.store parameter of nuxeo.conf, described at http://doc.nuxeo.com/x/QQA7

But it is not where anything is uploaded to
Should I not change the Data directory /var/lib/nuxeo/data instead?

You can also change the data directory, which by default also contains the binary store.
